Tofu scramble

Ingredients

Vague measurements because it's extremely subjective and I make it differently every time. I typically aim for the tofu to be about half the finished volume, and the combined veggies taking roughly the other half.

  • 2 blocks tofu
  • Bell pepper
  • Onion
  • Mushrooms
  • Spinach
  • Turmeric
  • Garlic powder
  • Salt
  • Black pepper
  • Vegetable or olive oil
  • Instructions

  • Press tofu
  • Dice veggies
  • Put a medium/large pan on medium heat
  • Add a thin layer of oil, wait for it to shimmer
  • Crumble tofu in your hands into pan
  • Add 1 or 2 tsp turmeric and generous sprinkle of garlic powder
  • Mix with wooden spoon until tofu is yellow (it should look similar to scrambled eggs now)
  • Add other veggies except spinach
  • Add salt and pepper
  • Stir frequently for a couple minutes
  • Add spinach
  • Stir frequently for a couple more minutes
  • Serve
