Tofu scramble
Ingredients
Vague measurements because it's extremely subjective and I make it differently every time. I typically aim for the tofu to be about half the finished volume, and the combined veggies taking roughly the other half.
2 blocks tofu
Bell pepper
Onion
Mushrooms
Spinach
Turmeric
Garlic powder
Salt
Black pepper
Vegetable or olive oil
Instructions
Press tofu
Dice veggies
Put a medium/large pan on medium heat
Add a thin layer of oil, wait for it to shimmer
Crumble tofu in your hands into pan
Add 1 or 2 tsp turmeric and generous sprinkle of garlic powder
Mix with wooden spoon until tofu is yellow (it should look similar to scrambled eggs now)
Add other veggies except spinach
Add salt and pepper
Stir frequently for a couple minutes
Add spinach
Stir frequently for a couple more minutes
Serve
